This Might Be The Most Nutritious Caesar Salad You Could Ever Make

Almost every ingredient offers a health boost.

There's salad and then there's salad. And then, there's this.

Whitney Tingle and Danielle DuBoise, the founders of Sakara Life , are all about healthy foods, and they've created a nutritious salad recipe that puts others to shame. At its base is kale (which contains all 9 essential amino acids, Whitney says) and brussels sprouts (a good source of sulfer, Danielle points out, which helps build collagen). Hemp and sunflower seeds help out with your Omega intake, and olive oil is of course full of healthy fats. Plus, the fennel is said to help fight bone density loss while the tart cherries, in addition to being delicious, have anti-inflammatory properties.

It all comes together to create a salad that offers powerful health benefits. Go ahead, dig in.

Shaved Brussels and Kale Caesar Salad

Serves 4

Ingredients

2 heads lacinato kale, destemmed and finely, or roughly, chopped

2 cups brussels sprouts, shaved

1 whole fennel, thinly sliced in half moons

1/2 cup dried cherries

1/2 cup walnuts

For the sunflower Parmesan:

1/2 cup sunflower seeds

1/4 cup nutritional yeast

2 Tbsp. hemp seeds

1 clove garlic

Himalayan salt, to taste

For the hemp Caesar dressing:

1/2 cup hemp seeds

1/4 cup filtered water

2 Tbsp. nutritional yeast

2 Tbsp. lemon juice, plus 1 tsp. for kale

1 Tbsp. Dijon mustard

1 clove garlic

1 Tbsp. olive oil, plus 2 tsp. for kale

1/4 tsp. Himalayan salt, or, to taste

Directions

Place ingredients for the Parmesan in a food processor and pulse until formed into a fine, crumbly texture. Set aside.

Place ingredients for the dressing into a blender and blend on high until smooth. Set aside.

Prepare Brussels sprouts and kale; add together in a large serving bowl. Toss with olive oil, lemon juice and salt, and gently massage with fingers.

Add walnuts, dried cherries, fennel and Parmesan to garnish. Lightly drizzle with dressing to serve.
