Volcano Potatoes Are a Perfect Twist on the Ordinary Baked Potato

Who doesn't love a loaded baked potato? With cheddar cheese, bacon, sour cream and chives, every bite is jam-packed with yummy goodness!

And lucky for me, there are quite a few recipes out there that put an even tastier twist on the traditional version, like cheesy baked potato soup or even easy-to-make loaded Hasselback potatoes .

But none can compare to this latest recipe for volcano potatoes.

This exclusive video shows how to create a volcano potato -- a regular baked potato that is literally erupting with melted cheese, delicious broccoli and spicy sour cream. And the best part? The whole thing is wrapped in mouthwatering bacon!

While it might all sound a bit overwhelming, this baked potato alternative hits the taste buds in just the right places.

Take a look at this simple volcano potato recipe below, and then watch the video to see just how good these bad babies turned out!

Cook: 90 minutes | Prep: 15 minutes | Serves: 2

Ingredients
:
  • 2 potatoes
  • 1 cup broccoli, steamed
  • 1 cup cheddar cheese, shredded
  • Bacon
  • 1/2 cup sour cream
  • 1 Tbsp. hot sauce
  • Chives, chopped
Instructions
:
  1. Preheat oven to 425 F.
  2. Bake 2 potatoes in aluminum foil for 20 minutes at 425 F.
  3. Slice off one end of each potato.
  4. Remove other end using a jagged, diagonal-cut pattern.
  5. From the jagged end, scoop out inside of potato.
  6. Scoop cheddar cheese and broccoli into hollowed-out potato.
  7. Wrap potato in raw bacon, holding in place with toothpicks.
  8. Top off with more cheese.
  9. Bake for 60 to 70 minutes at 325 F.
  10. In small mixing bowl, combine sour cream and hot sauce.
  11. Top each potato with sour cream mixture and chives, as desired.
  12. Serve and enjoy!
